This recipe serves a family of 4 with big size portions. If you need to make a bigger batch just adjust the cooking time by adding a few extra minutes.

To cook potatoes:

  • 3 large organic potatoes
  • 1 cup of water
  • 1 teaspoon of Himalayan salt

To make the mashed potatoes:

  • 3 tablespoons of high quality butter like Kerrygold
  • 1/2 cup of organic whole milk
  • Himalayan salt to taste

  1. Wash and peel potatoes.
  2. Dice the potatoes to make sure they cook fast – that’s the key to having them ready in 3 minutes.
  3. Put the diced potatoes in the Instant Pot and add 1 cup of water. The water should just cover the potatoes.
  4. Add salt and stir.
  5. Close the lid and cook for 3 minutes. You’ll have to click on manual and set the time to 3.
  6. Once it’s done, wait a few minutes before opening the lid to make sure it’s naturally depressurized. However, if you're in a hurry you can do a quick release.
  7. Drain the water from the Instant Pot before making the mashed potatoes. Tip: make the mashed potatoes in the Instant Pot so you have less dishes to wash afterwards.
  8. Add the butter and start mashing the potatoes. You can mash them with a fork or a masher but I’ve found that using a hand mixer is the fastest way to get them done.
  9. Once they’re almost all mashed, add the milk and salt. Taste a few times while adding the salt to make sure they taste right to you.
  10. Keep mashing them until they have the texture you like.
  11. Serve just plain or garnish with a little bit of parsley and/or parmesan cheese. Enjoy!
