There are a few things that I never get tired of eating…ever! And this is one of them. It’s a great side dish to any meal and the best part is that it takes a few minutes to make.
This is my mom’s recipe and we’re both pretty much addicted to it. I might have eaten a whole bowl of this by myself, more than once. So that’s why I wanted to share this recipe with you. If you love it as much as I do, let me know. 🙂
This is a great salad to bring to a party or if you’re like me, to eat it almost every day of your pregnancy.
The following quantity of ingredients serves 4, but if you want to eat a lot of this salad in one meal I would make this for 2 people.
Ingredients:
- 1 large organic cucumber
- 1 small bunch of organic dill (I use about 4 little branches)
- 3 tablespoons of organic Greek yogurt (if you can’t find Greek, regular regular plain yogurt will work)
- Juice of one lime or lemon (but you have to use the real thing)
- Salt and pepper to taste
Directions:
First, peel the cucumber and then cut it in very thin slices. I usually just use a knife but if you have a mandoline slicer that’s better for this since it will cut the slices really thin and evenly. Put the cucumber slices in a bowl.
Then wash the dill and pat dry it with a paper towel, chop it up in small pieces. Add it to the bowl with cucumbers.
Add the yogurt, lime juice and salt and pepper to taste. Go easy on the pepper though. Mix it all and it’s ready to eat!
I love to let it sit in the fridge for about 30 minutes before we serve it so the lime juice gets absorbed by the cucumber but it’s not necessary.
Feel free to adjust the quantity of dill or yogurt according to your taste. When my mom is making this for herself she adds twice the amount of dill since she loves the flavor. So don’t be scared to experiment with quantities.
