Instant Pot Banana Bread Recipe
Ingredients:
- 3 ripe bananas
- 1/4 cup butter or margarine, melted
- 1/4 cup milk
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup brown sugar
- 1/2 cup sugar
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- Mix-ins of your choice like chocolate chips or pecans (optional)
- 1 ½ cups water
Instructions:
Place your bananas in a bowl and mash them with a fork.
Blend mashed bananas, butter, milk, egg, vanilla, brown sugar and granulated sugar together in a blender.
In a large mixing bowl, combine flour, salt and baking soda.
Pour the mixture from the blender into the mixing bowl and fold wet ingredients into the dry ingredients.
Lightly spray a 7-inch springform pan (or tiny silicon loaf pans that fit in your Instant Pot) with cooking spray.
Pour your banana bread mixture into your pan. Some people cover it with aluminum foil but we don’t use foil in our home so we don’t cover it. Instant Pot also sells a baking kit that comes with a round pan with a silicone lid. If you plan to make this often, I would recommend getting this baking kit.
Add the water to the inner pot.
Put your springform pan onto the Instant Pot trivet and lower it into the Instant Pot.
Put the lid on the pressure cooker and turn the valve to sealed, then set to high pressure for 55 minutes cooking time.
When the Instant Pot beeps to let you know it has finished, allow for a natural pressure release of 10 minutes and then do a quick release to let out the rest of the pressure.
Remove the springform pan from the Instant Pot and cool on a wire rack before serving. Then all you need to do is release the spring on the pan and remove the bread from the pan.
This Instant Pot Banana Bread is super easy and delicious! If you love it as much as I do, be sure to pin it to your favorite easy recipes board on Pinterest so you can find it again fast when you’re ready for a treat!
