Everyone loves dessert, am I right? And while a decadent sweet treat is great now and then, I try to choose treats that have some kind of nutritional benefit as much as possible – both for myself and my kiddos. My favorite are dessert recipes that don’t contain a ton of sugar but are still yummy!
Some of the easiest desserts and treats to make are bars. You simply have to prepare the batter, pour it into a pan, and bake! No need to scoop individual portions or stand at the stove for a long time. I love anything that makes preparing food easier because #momlife!
These Lemon Zucchini Bars are easy to make and are a perfect recipe for your kids to help you with. They will enjoy grating the zucchini and helping to zest the lemon but there aren’t so many steps that they are going to get bored!
And these delicious bars make a fantastic dessert but also contain veggies! It’s a great way to sneak some extra veggies in, particularly if you happen to have a kiddo that is a picky eater. And the pecans add some protein!
Lemon Zucchini Bars Recipe
Ingredients:
- 2 eggs
- 1 ½ cups flour (stir before measuring to make fluffy)
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon nutmeg powder
- ½ teaspoon ginger
- 1 cup sugar
- ½ cup avocado oil
- ½ teaspoon orange extract
- Peel from one lemon (grated)
- 1 cup zucchini (grated)
- ½ cup chopped pecans
Directions:
Begin by preheating the oven to 350 degrees. Grease a 9×13 baking dish and set it aside.
Measure the flour, baking powder, baking soda, salt, nutmeg and ginger into a mixing bowl and stir to combine well. Set this bowl with the dry ingredients aside.
In another large mixing bowl, beat the eggs until fluffy. Add the sugar to the bowl and beat again. Then add in the oil, lemon peel, and orange extract and mix well.
Add the bowl of dry ingredients to the wet mixture and mix well to combine.
Finally add the zucchini and nuts and mix well but do not overmix. Just stir until completely combined.
Pour the batter into your greased pan and bake for about 30 minutes or until baked through.
Let the bars cool and then cut. Serve and enjoy!
