Ingredients:
- 2 cups fresh basil leaves
- ½ cup Parmesan cheese
- ½ cup avocado oil or olive oil
- ⅓ cup pine nuts
- 3 cloves of garlic
- Salt and pepper to taste

Instructions:
Place two cups of fresh basil leaves into the bottom of a food processor. Pack them down fairly tightly. You want to make sure that there is plenty of room left for the rest of the ingredients.
Add ½ cup of pine nuts and the cloves of garlic to the food processor. You can use minced garlic if you don’t have whole cloves.
Sprinkle in ½ cup of Parmesan cheese.
Sprinkle salt and pepper to your taste. You can aways add more salt and pepper at the end, if needed, so go easy at first.
Pour the ½ cup of avocado oil into the processor.
Place the lid on the food processor and blend for three to five minutes or until you get to the consistency you desire for your pesto. If your pesto seems too dry, you can add small amounts of avocado oil to the mixture until it is to your preference.
Taste and add more salt and pepper if desired.
You can then serve your pesto immediately!
You can also place the pesto in the refrigerator in an airtight container and keep it for up to a week. Or freeze it and it will keep for three to four weeks.
