This Instant Pot Cajun Sausage and Rice is such a great recipe for a quick and easy weeknight dinner. It’s a one pot meal so you won’t even too many dishes dirty!
I used to make my cajun sausage and rice in the slow cooker with some cajun seasoning and veggies. But this is SO MUCH FASTER.
And it’s so tender and savory, I really just can’t get past it.
But, really, even if it was just “meh – the same as what I can make in the slow cooker” and not so much more flavorful, the fact that I can make it in about 20 minutes, all in one pot, that makes it a million times more awesome.
And I know I’m probably just telling you something you already know at this point–because I have talked about my Instant Pot before and you know that I use it to make just about everything. From desserts to dinners, lunches, snacks and even breakfast, my Instant Pot is a serious workhorse.
For real, I use it all the time, multiple times a week. It makes cooking so much easier and stress-free. You just need to gather all of your ingredients, pop them into the pot, set it and walk away!
Except, wait, for this recipe–it only takes a few minutes, literally, so walking away won’t really work for you. Just stay there. LOL!
What You Need to Make Instant Pot Cajun Sausage and Rice
- 1 tablespoon olive oil
- 8 ounce Kielbasa sausage, cut into ¼ inch slices (or andouille sausage, chicken sausage or other)
- 1 medium onion, chopped
- 1 medium bell pepper (green, red, yellow or a combination), diced
- 1 (14 ½ ounce) can diced tomatoes with liquid
- 1 cup chicken stock or chicken broth
- 1 tablespoon steak sauce
- 3 bay leaves
- 1 tablespoon sugar
- ½ teaspoon hot pepper sauce
- 1 cup uncooked long grain rice
How to Make Instant Pot Cajun Sausage and Rice
Set your Instant Pot to sauté mode, then add oil, peppers and onion, stirring continuously. Cook until browned slightly.
Add the sausage and the remaining ingredients to the pressure cooker, and add the rice, and stir to combine.
Set the Instant Pot to manual pressure for 5 minutes cook time.
Natural release for 5 minutes and then a quick release any remaining pressure.
Serve and garnish with peppers, cilantro and/or parsley.
