I’ve been on a bit of a cajun recipe kick lately and this Instant Pot Gumbo has seriously taken the lead in awesome recipes I can make for an easy weeknight dinner.
I mean, really, about 15 minutes and I’m digging into a big bowl of the most rich and savory meals that I can imagine. So many awesome flavors slamming together in a symphony of — wow, I really like Instant Pot Gumbo! LOL!
In all seriousness, I’m a little in love because this recipe is really just a crazy blend of great flavors. You get a little sausage and some shrimp–something like you’d never expect to go together, but they so do.
And the recipe is also the tops because it comes together so fast. You just need a smorgasbord (is that the word?!) of ingredients and then toss it together.
It’s the Instant Pot that adds the speed to even the most complex comfort food recipes, though. I have seriously used my Instant Pot to make just about everything and it makes EVERYTHING fast. From desserts to dinners, lunches, snacks and even breakfast, my Instant Pot gets a workout, and it’s always a fast one.
I use the pressure cooker all the time, multiple times a week to make cooking for the family so much easier and stress-free. You just need to gather all of your ingredients, pop them into the pot, set it and walk away!
What You Need to Make Instant Pot Gumbo
- 3 tablespoons oil
- 14 ounce Kielbasa sausage, cut into ½ chunks (or andouille sausage, whatever)
- 1 large onion, chopped
- 1 large green pepper, chopped (alternatively, used ½ a green pepper and ½ red pepper)
- 3 garlic cloves, minced
- ¼ teaspoon ground cayenne pepper
- ¼ teaspoon ground black pepper
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (12 ounce) package frozen shelled and deveined shrimp, uncooked
- ¼ teaspoon salt
- 1 cup water
- 2 tablespoons cornstarch
- 3 tablespoons water
- Optional: 2 bay leaves, Worcestershire sauce or cajun seasoning (also known as creole seasoning)
And about 1/2 cup of white rice per person to serve the gumbo recipe over, if you want.
How to Make Instant Pot Gumbo
Set the Instant Pot to saute function and add the oil and onion for 3 minutes, stirring occasionally.
Add green pepper, garlic, cayenne pepper, black pepper, diced tomatoes, sausage, shrimp, salt and water.
Seal valve and set the Instant Pot to pressure cook on high pressure for 6 minutes. When it’s done cooking, do a quick release.
Whisk together cornstarch and 3 tablespoons of water until smooth. Then, set Instant Pot to sauté.
Pour the cornstarch mixture into the instant pot and stir for 3-5 minutes to allow the gumbo to thicken.
Your gumbo is now ready! Serve gumbo over rice.
