It’s late and dinner time is coming up. The kids are getting hungry and you just realized you forgot to thaw meat and have no idea what to make for dinner. Does this sound familiar?
This happens to me more often than I’d like to admit and that’s why I love the Instant Pot so much. On those days where I don’t feel like cooking or I’m just running out of time, I dump everything in the pot and have dinner ready 10-20 minutes later. It’s really that easy!
I even started making some of my favorite side dishes again, like mashed potatoes, because the Instant Pot cooks everything so fast without me having to stand in the kitchen and make sure nothing gets burned.
I always joke with my friends that everyone should be sent home from the hospital with an Instant Pot after giving birth because you’d actually have some decent meals while you’re carrying for a newborn. 🙂
I love making this recipe because my kids love to eat pasta and it’s a great way to sneak in protein and veggies. Sometimes, if I have more time, I’ll even add grated vegetables, like broccoli, cauliflower and even thinly slices spinach. It doesn’t change the flavor and adds extra vegetables to a tasty dish.
Instant Pot Italian Goulash Recipe
Ingredients:
Tomatoes are known to contain high levels of pesticides. If you cannot buy all organic ingredients, buy organic tomato sauce for this recipe.
- 1 lb organic grass-fed ground beef
- 1 white onion diced
- 2 green bell peppers diced
- 1 tablespoon chopped garlic
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 4 cans (14.5 oz) italian stewed tomatoes or diced tomatoes
- 1 jar (28 oz) of tomato sauce
- 1 lb pasta of choice (like cavatappi)
Directions:
Put the Instant Pot on sauté mode. Add beef, bell pepper, onion, and garlic. Sauté for a few minutes, until meat is browned and vegetables are tender. If you’re using frozen ground beef, try to cut it in smaller pieces before you brown it.
Pour in the jars of tomato sauce and stewed tomatoes inside the pot. Then add salt and pepper. Set to high pressure (click on manual button) for 10 minutes. Once it’s done, let it naturally release.
If you’re using frozen ground beef, cook it for 15 minutes and let it naturally release. Once it’s done make sure it’s cooked completely. If you used really big chunks of frozen ground beef it might not be cooked all the way. If this happens, put the Instant Pot on sauté mode and cook until ground beef is throughly cooked.
While the ground beef is cooking in the Instant Pot, you can cook the pasta in a separate pot on your stove top. Just follow the instructions on the package of your pasta.
If you want to cook the pasta in the Instant Pot you can do that too. Once the ground beef is done cooking, open the lid and put your pot in sauté mode. Put the pasta inside the instant pot and cook. Make sure you stir frequently while it’s cooking and keep an eye on it. Cook the pasta until it’s done to your liking.
Serve the pasta and add the goulash on top. That’s it!
