As much as I love cooking I am a person that rarely uses recipes because I never have all the ingredients the recipes call for or because I don’t like some of the ingredients they use or because I like to add more of my favorite ingredients to the recipe.

I’m also a mom, which means a lot of my cooking has to be things I can make in record time!
We love salads and eat them every day!
When it comes to salads, my go-to is to put the veggies we have at home in a bowl and make a salad out of them. I don’t follow directions, quantities or proportions. I have found that the best salads come out when you eye-ball the ingredients according to what you love.
However, I do buy a lot of the same vegetables so my salads end up using the same ingredients, just in different quantities and combinations.
One salad everyone loves is my strawberry spinach salad. It’s even become my go-to for parties and I have people asking me for the recipe all the time. The best part is that it takes about 5 minutes to put it together.
For this recipe you will be adding the quantity of ingredients you like, but stick the ingredient list because that’s the key this delicious salad!
Spinach and Strawberry Salad Recipe
Ingredients:
For the salad:
- Spinach leaves
- Strawberries
- Almonds or slivered almonds
- Feta cheese
For the dressing:
- 3 tablespoons of Balsamic vinegar
- 1 tablespoon of Dijon mustard
- 1 teaspoon of raw honey (you can use regular honey too)
**We use organic ingredients for both the salad and dressing.
Directions:
For the salad:
Put in a salad bowl the amount of spinach you’d like to eat during your meal. Cut the strawberries in thick slices and add them to the spinach leaves.
Mix the spinach and strawberries each time you add 3 strawberries to make sure you have the amount you want.
Once you see that you have the quantity of spinach and strawberries you like, add the almonds or slivered almonds and feta cheese.
I go easy on the almonds but add a lot of feta cheese but add these ingredients to your taste.
Mix the salad one more time and check to see if you want to add any more of these ingredients.
For the dressing:
Mix in a little bowl all the ingredients and pour them on the salad. If you’re taking this salad for a party, bring the dressing on a separate container and add it before the salad is served.
The quantities I listed are the right amount of dressing for a big salad for 2 people, if you’re making it for more people you might want to double the ingredients. If you’re adding more, make sure you add a little at a time and try the salad until it’s how you like it.
Once you added the dressing to the salad make you sure mix it evenly and it’s done!
