The chicken is so tender, juicy and flavor-rich that I can imagine this becoming a staple in our lunches and dinners regularly. Plus, this Instant Pot barbecue chicken is definitely an easy meal to make.
Not only can you just pop the chicken into the Instant Pot and have it cook while you go do what you have to do, you can basically pair this it with anything. Just like pulled pork, it’s just so versatile!
No kidding — anything. Green beans? Yes. Baked potatoes? Yes. Kale chips? Absolutely. Cinnamon apples? Why not?!

And you might be thinking: well, I really want a lighter option for serving my BBQ chicken.
That’s totally possible. Which is actually why I cooked this to begin with. You can see in the photos, I didn’t load up with french fries and fried okra (although I have a friend that suggested that!). No, I made a simple BBQ chicken wrap with lettuce and enjoyed my lunch with a little extra BBQ sauce drizzled over every bite. I felt like I’d ordered this awesome comfort food from a fancy restaurant, the chicken was so flavorful.

Instant Pot BBQ Pulled Chicken Recipe
Ingredients:
- 2-4 chicken breasts (alternatively, you can use chicken thighs, just bump this up to 6-10)
- 2 cups barbecue sauce
- ½ cup water (or chicken broth)
- Seasoning: the BBQ sauce is enough seasoning for me, however, you can add extra seasoning to your liking, such as salt, pepper, and cayenne pepper
I enjoy making my own barbecue sauce and love using this Sugar-Free BBQ Sauce but if you don’t have time, you can always use your favorite bottled sauce.
Instructions:
Add all of the ingredients to the inner pot of the Instant Pot. Seal the lid of the pressure cooker and turn the valve to sealing.
Set the Instant Pot to manual 10 minutes high pressure. If you’re cooking frozen chicken breasts, cook for 15 minutes. Allow for a natural release to retain optimal moisture.
Remove the lid from the pressure cooker and use two forks to shred the chicken.
Now your chicken is so juicy and ready to be eaten!
You can serve it in lettuce leaves if you’re trying to keep it healthy, or serve it on taco shells, or pair it up with sides like broccoli and Instant Pot mashed potatoes.
