My husband loves eating pies and I always make them from scratch but was never too fond of making Graham Cracker crust. It’s just not the healthiest option and has more sugar than I like.
I searched for the perfect pie crust and ended up experimenting until I come up with this coconut pie crust. It is very easy and fast to make and it only uses TWO ingredients!!
You can use this crust in any pie recipe. It tastes delicious without taking away flavor from the actual pie and it only takes 2 minutes to prepare.
Let me know if you love it like we do!
Coconut Pie Crust
This recipe is for a 9 inch pie dish.
Ingredients:
- 1 1/2 cups of unsweetened shredded coconut (I use this one).
- 5 tablespoons or 2.5oz of grass-fed butter (if you’re not too fond of butter you can use 3 tablespoons and you can also use regular butter if you don’t have grass-fed)
Directions:
Preheat the oven to 325 F.
Melt the butter. Mix it with the coconut. I like doing this with my hands, it’s much faster. I also do it in the pie dish so I don’t have to wash as many dishes afterwards.
Once it’s mixed put it in the pie dish. Make sure you press it against the dish.
Place it in the oven for 10-15 minutes, until it’s golden. Make sure you keep an eye on it.
Once it’s done take it out and add the pie filling.
If you’re going to be using this crust for a pie that needs to go back in the oven then just cook the pie crust for 8 minutes (or until it’s slightly golden) before adding the filling and putting it back in the oven.
Once the pie is ready, add some frosting and decorate it:
We now use this pie crust for all the pies we make. It’s very fast and easy to make plus I love that it doesn’t have sugar nor too much butter. Plus it holds up really well.
If you’re not a fan of coconut, don’t worry, the coconut flavor is not strong.
Give it a try and let me know if you liked it!
