A few weeks ago we celebrated my daughter’s third birthday. I wanted to make cupcakes and a small cake for her birthday that was low in sugar and with organic ingredients so I spend a couple of weeks testing different recipes but my biggest challenge was to find a frosting that didn’t have 4-6 cups of sugar. I find that a little excessive and wanted to make something that would taste good without needing so much sugar.
When I bake treats that we eat at home I usually use coconut milk or whipped cream to make a sugarless frosting, however this doesn’t hold up well and has to be eaten almost right away. I needed something I could frost the night before and that would still look pretty the next day, in fact that would hold up for several days in the fridge. Since I couldn’t find a recipe like that I came up with my own.
This is very easy to make, tastes good and holds up for several days in the fridge without loosing its consistency. I like to use all organic ingredients for this but you can use regular ones.
One batch is enough to cover a cake made in a 9″ pan. I also use one batch to cover 24 mini cupcakes and 6 regular sized cupcakes because I don’t add too much to it but a good rule is that one batch will be enough for 12 regular cupcakes and 24 mini cupcakes.
Almost sugar-free frosting recipe
Ingredients:
- 1 box of cream cheese
- 5 tablespoons of butter (we love Kerrygold)
- 1 cup of powdered sugar
- 1 teaspoon of vanilla extract
- 2 tablespoons of heavy cream (optional)
Instructions:
- Take the butter out of the fridge and leave in on counter for 10 minutes. I’ve skipped this before, you’ll just have to mix it a few more minutes.
- Put the cream cheese in a bowl and mix it with a mixer for about 2 mins.
- Then add the butter and mix for a few more minutes until it’s all blended.
- Add the powdered sugar little by little and once it’s all mixed add the vanilla extract.
- If you’re using the heavy cream, you can add it now. I like to use it because it gives it a better consistency.
- Now it’s ready to frost your cake or cupcakes.
I’m not the best at frosting and always have issues frosting with bags so now I use this Wilton Dessert Decorator Plus. It’s so easy to use!
I like to decorate it my cupcakes with India Trees sprinkles sprinkles because they don’t have artificial ingredients. Our favorite are Carnival Mix and the Chocolate ones. Those are the ones you see on the cupcake pictures in this post.
If you try this recipe, let me know how it comes out!
