If you know me, you know that I love chocolate and I love desserts. I definitely have a sweet tooth but I also try to avoid eating too much sugar. It can sometimes be hard to balance wanting to have a sweet treat and wanting to avoid overdoing it on sugar.
So, I have been on a quest to find treats that have wholesome ingredients, don’t contain an abundance of sugar, and are deliciously satisfying to my sweet tooth. I don’t do this just for myself but also because I want to offer my daughters healthier desserts as well.
You will love these Chocolate Bars with “Caramel” Drizzle. These bars don’t contain any white sugar. They get their sweetness from maple syrup!
And these bars contain coconut oil, which I love! It’s a staple here in our house and I use for everything from cooking and baking to DIY body products.
This is a yummy treat that you won’t feel guilty or bad about eating — not that you should feel bad or guilty about eating a treat! There are so many societal pressures to eat a certain to look a certain way when really we should be more focused on eating well to fuel our bodies and be healthy, not avoiding foods or even avoiding eating because it’s “better” to be thin.
I want to teach my girls to love their bodies, to eat foods that are good for them, and to fully enjoy a treat now and then.
Healthy Chocolate Bars with “Caramel” Drizzle
Ingredients:

Base:
- 2 cups organic rice puffs
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 1/4 cup rice syrup
- 4 tablespoons maple syrup
- 2 tablespoons coconut oil
Chocolate:
- 1 tablespoon coconut oil
- 1/4 cup mini chocolate chips
OR - 4 tablespoons coconut oil
- 8 tablespoons cacao powder
- 4 tablespoons maple syrup
Caramel:
- 1/4 cup smooth almond butter
- 1/4 teaspoon vanilla paste
- 1.5 tablespoons maple syrup
Directions:
Start by making the base. Combine the first three ingredients (rice puffs, almond flour and coconut flour) in a large bowl and mix well.
Heat the rice syrup, maple syrup, and coconut oil in a small saucepan, stirring continuously until combined. Alternately you could heat it in a bowl slowly in the microwave.
Pour the contents of your saucepan into the bowl of dry ingredients and stir until the mixture is an even consistency. It should look sticky.
Line an 8×8 pan with parchment paper. Place the mixture into the pan and spread it using a silicone spatula until it is smooth and even.
Place it in your freezer for 30 minutes.
While the base is in the freezer, start the chocolate topping. Heat the coconut oil in a saucepan over low heat. Slowly whisk in the chocolate chips (or cocoa powder and maple syrup) until combined.
When ready, pour the chocolate mixture over the base and spread it using a silicone spatula until smooth and even.
Place the pan back in the freezer.
Now it is time to make the caramel drizzle. Measure all of the ingredients into a bowl and whisk until well combined. Scoop the mixture into a piping bag or in a small baggie (like a sandwich bag) and cut the tip off of one of the corners.
Once the chocolate is set and hard (this should take about 10 minutes), use your piping bag or sandwich baggie piping bag to decorate the bars with the caramel.
Return to the freezer to set.
When you’re ready to serve these bars, remove the pan from the freezer and let it sit for 2 to 4 minutes. Cut into squares or bars.
These are some of our favorite treats! So much that I have to hide them from my girls or else they’ll eat them all at once.

Delicious organic and healthy chocolate bars with a caramel drizzle made out of almond butter. This is a sweet treat that everyone will love!

- 1.5 tablespoons maple syrup

- Leave in freezer for about 10 minutes, until chocolate is set and hard before adding the caramel drizzle.
Caramel drizzle
- While you wait for the chocolate to harden, make the caramel drizzle.
- Measure all of the caramel drizzle ingredients into a bowl and whisk until well combined.
- Scoop the mixture into a piping bag or in a small baggie (like a sandwich bag) and cut the tip off of one of the corners.
- Use your piping bag or sandwich baggie piping bag to decorate the bars with the caramel.
- Return to the freezer to set.
- When you’re ready to serve these bars, remove the pan from the freezer and let it sit for 2 to 4 minutes. Cut into squares or bars.
