We love eating tacos in my home; in fact, it’s one of my go-to meals. And what I love about tacos is that it’s so easy to customize them to your liking — which makes it a great food to eat with kids since they can add whatever they want to the tacos. Plus, they are filling!
You know I love my Instant Pot and it makes having variety in our diet so much easier! The Instant Pot gets used regularly in our house. I love that I can throw my ingredients in, set it and then go take care of something else while dinner cooks! And I don’t need to worry about it burning.
This recipe is a great option if you’re someone who’s vegan or vegetarian. But you could easily make non-vegan beans by adding some ham or some other kind of meat to your beans or by adding shredded cheese.
This is a great meal if you’re hosting people that are vegetarian/vegan and also meat eaters, since you can serve up the ingredients and let each person build their own tacos.
You could also turn this into Instant Pot black bean tacos, if you’d rather not have pinto beans.

Instant Pot Vegan Bean Tacos
Ingredients:
- 2 cans of organic pinto beans (you can also cook the beans from scratch but we’re using canned beans to save time since the perfect meal to make on busy nights)
- 1 white onion; sliced into strips
- 1 red bell pepper; sliced into strips
- 1 yellow bell pepper; sliced into strips
- 1/2 teaspoon sea salt
- 1/2 teaspoon pepper
- 1/2 red onion; diced
- 1/3 bundle of cilantro; chopped
- 2 roma tomatoes; diced
- 1 large hass avocado; sliced
- 12 fresh tortillas (corn, flour)
- Salsa or Lime Juice (optional for topping)
- Taco holders
Instructions:
Slice your peppers and onions.
Add your beans, white onion, and peppers to the inner pot of your Instant Pot. Stir to combine and top with salt and pepper.
Set your Instant Pot to high pressure for 2 minutes cook time.
Natural release is fine, but feel free to do a quick release as either type of pressure release is fine with this recipe.
Dice the red onion, tomatoes, and cilantro to use as topping for your vegan tacos.
Cut the avocado in slices.
Place the bean mixture in the tortilla and the items of your choosing. Add the salsa of your choice to top it off, although this is optional. And enjoy!

Ingredients
