After having chocolate pie a while back at my mother’s in law I got hooked on it. Who doesn’t like homemade chocolate pie, right? This is when I realized I needed to find a paleoish way to make this pie so my family could enjoy it, especially because I’m trying to make “healthier” desserts for my daughter.
If you’re looking for a healthier alternative to chocolate pie but one that actually tastes good, then look no further!
The best part is that it’s really easy and fast to make.
Pie Crust:
For every pie I make I use my coconut pie crust. It’s easy to make and healthier than a Graham cracker crust.
Ingredients:
- 1 1/2 cups of Organic Unsweetened Shredded Coconut
- 5 tablespoons or 2.5oz of grass-fed butter
Directions:
Preheat the oven to 325 F.
Melt the butter. Mix it with the coconut. I like doing this with my hands, it’s much faster.
Once it’s mixed put it in the pie dish. Make sure you press it against the dish.
Place it in the oven for 10-15 minutes, until it’s golden.
Chocolate pie filling:
This will make enough pie filling for a 9 inch pie plate.
Ingredients:
- 1/2 c. Organic Honey (you can also use Maple Syrup or coconut sugar)
- 4 tbsp. Arrowroot Flour
- 2 tbsp. Cacao Powder
- 2 c. milk (or Coconut Milk)
- 1 tsp. Vanilla Extract
- 1 tsp. butter (if using coconut milk, omit this)
Directions:
Whisk together arrowroot powder, cocoa and milk until it’s well mixed.
In a small saucepan, combine the honey and the arrowroot powder, cocoa and milk mixture over medium heat. Stir constantly and cook until the mixture thickens.
Once thickened, remove from heat and stir in vanilla and butter. Make sure all ingredients well mixed together.
Add the pie filling to the crust and let it cool. I cool it on the counter for a while before putting it in the fridge.
Before serving the pie I like to add some organic heavy whipping cream on top. To make the whipping cream I just put it in the mixer on high speed until it’s fluffy (I don’t add any sugar to it).
I toast some shredded coconut in a frying pan until golden. Once it’s cooled down I decorate the pie with it.
You can also decorate it with your favorite fruit. I’ve found that strawberries taste the best with this chocolate pie.
This pie doesn’t last very long in our home and it’s been a favorite every where we take it.
