My kids love french fries and they also love green beans, so one day I thought to myself? Why not try and make “french fries” out of healthier veggies? And ever since, we’ve been making “french fries” out of all sort of veggies! It’s such a fun way to get more veggies into a child’s diet.
I love taking veggies my kids might not be crazy about and preparing them in a different way because often that can be the key to eating new types of foods. So, if you haven’t tried making “french fries” out of veggies yet, this recipe is one of the yummiest ones to start with.
Green beans are a great (and delicious) vegetable with lots of health benefits. Green beans are low in calories and fat but high in fiber. They are a good source of vitamins like A, C, K, B6, and folic acid. They are also a good source of calcium, iron, manganese, and potassium. Finally, they are low in cholesterol.
As a mom you always want your kids to enjoy and eat healthy foods like fruits and vegetables, particularly when you go to the trouble of preparing and cooking them! Sometimes it takes repeated exposure for kids to come around to a new taste or flavor and sometimes it’s a simple matter of trying out a new way of preparing or eating the food in question.
Don’t give up if you have a picky eater! Keep offering fruits and veggies to your kids, even if they don’t eat them, and you might find that after a while they might start to enjoy foods they previously wouldn’t touch.

This Green Bean Fries recipe is a great one to make for kids. Most kids seem to love dipping and will more readily try new foods when they are accompanied by a dip they love. Plus, fries tend to be pretty popular with almost everyone!
Green Bean Fries Recipe
Ingredients:
- Fresh cut green beans
- 3 eggs (beaten)
- 1 cup of all-purpose flour
- 1 cup of panko bread crumbs
- A couple dashes of pepper
- ½ teaspoon of seasoned salt
- ½ teaspoon of parsley
- ½ teaspoon of cilantro
- ½ teaspoon of garlic powder
- ½ teaspoon of onion powder
- ½ teaspoon of chili peppers
For Dipping:
- hummus
- guacamole
- Frankie V’s Kitchen mayo or ketchup
Directions:
Gather your supplies and preheat your oven to 425 degrees. Grease a large baking sheet.
Start with prepping your green beans by cutting the ends off of each bean.
Measure your flour into a small bowl. In a second bowl, crack your eggs and beat. Add your bread crumbs and remaining spices in a third bowl.
First, place your green beans in the flour and coat. Then transfer them to the egg bowl until coated with egg, repeat that process (coating each bean a second time with flour and egg). Finally transfer the bean into the bread crumbs.
I find using a fork to transfer from bowl to bowl works best.
Spread the coated green beans out on your baking sheet in a single layer.
Bake for 10 minutes or until golden and crispy.
Once they’re done, let them cool for a few minutes and serve with your favorite dipping sauce or as a side to your meal.
