I really love having these Instant Pot Herbed Fingerling Potatoes. Tender, but firm they are the perfect accompaniment for so many dishes. The best part is, they’re literally 5 minutes in the Instant Pot. And they’re so easy to make this is one of my go-to recipes for when we have people over!

Basically, anything I can cook for just 5 minutes is a winner in my book. That just seems insane, but it makes the best herbed potatoes, for real.
You seriously can’t make mashed potatoes as fast as you can get these Instant Pot Herbed Fingerling Potatoes done. It’s just straight-up amazing.
Which is what I love so much about having an Instant Pot at the ready. You can just dump your ingredients in, give them a stir, and close it up. Pop in your time and pressure release when it’s ready, then eat.
What other appliance can you rely on like that?! Not one.
I mean, no burning, no multiple pots, no spending 15 minutes to pre heat your oven, nothing. Just dump it in your electric pressure cooker and cook. I love it.

Instant Pot Herbed Fingerling Potatoes
What You Need to Make Instant Pot Herbed Fingerling Potatoes
- 1 1/2 pounds fingerling potatoes
- 1 teaspoon rosemary
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1 to 2 tablespoons olive oil
- 1 1/2 cups water
Optional: 1/2 teaspoon garlic powder and/or 2 tablespoons chicken stock to add a different twist.

How to Make Instant Pot Herbed Fingerling Potatoes
Wash and cut the baby potatoes in half.
Add the potatoes to a small casserole dish that will fit in your Instant Pot. Add the seasonings and olive oil on top of the potatoes.
Place water into the inner pot of the Instant Pot and place the dish, using a trivet, in the Instant Pot.
Close and lock the lid and set it to high pressure for a cook time of 5 minutes. Yeah, 5 minutes–that’s all it takes to cook the potatoes and make the best side dish ever.
Quick release and serve!
You can garish these Instant Pot potatoes with parsley or Parmesan cheese. They go very well with steak, chicken ad even fish!

Ingredients
- 1 1/2 pounds fingerling potatoes
