Making this easy Instant Pot breakfast quiche just makes me love my Instant Pot even more. It’s seriously one of the best kitchen tools I own. I use it all the time, multiple times a week — breakfast, lunch and dinner.
It makes cooking so much easier and stress-free. You just need to gather all of your ingredients, pop them into the Instant Pot, set it and walk away!

What You Need to Make Instant Pot Southwest Breakfast Bake
- 1 packages spicy breakfast sausage
- 1 14 ounce can black beans, rinsed
- 1 ½ cup shredded hash browns
- 3 eggs, beaten
- 2 tablespoons milk
- 1 cup Monterrey Jack cheese
- Salt and pepper to taste
Optional: tortillas, avocado, salsa, sour cream, chili powder
How to Make Instant Pot Southwest Quiche
Set the Instant Pot to sauté and place the breakfast sausage in the inner pot, crumbling it up while you stir it.

When the sausage is cooked all the way through, drain the grease and set the sausage mixture aside in a secondary bowl.
Prepare a casserole dish or a 7-inch springform pan by lining the pan with parchment paper or spraying lightly with non-stick cooking spray.
Add the items to the prepared pan in this order: black beans, cooked sausage, shredded hash browns, and cheese. I always feel like I’m going a little overboard on the cheese, so I hold back a little, then check. Then I end up tossing more cheddar cheese on top.

Combine the eggs and milk in a second bowl then pour this egg mixture over the ingredients in the pan.

Add 1 cup of water to the inner pot of the Instant Pot. Place the casserole dish or springform pan on the trivet in the pressure cooker.
Turn the pressure valve to sealed and set to high pressure for 6 minutes.
Do a quick release, then carefully remove the pans using the handles on the trivet.
I like to garnish my Instant Pot baked quiche with a little sour cream and green onions, but that’s just me–you do you!
The hash browns will be golden brown and act like a little pie crust holding the whole quiche together so you can slice it like a pie!
Pair it with a cesar salad, a strawberry and spinach salad or a cucumber salad.
